In the provinces of Parma and Reggio Emilia and neighboring Modena today are focusing the major productions of salami, Parmigiano Reggiano cheese, pasta and vegetable preserves in the country. But Parma is, by tradition, to be its center and the "capital" undisputed, with the presence of gastronomic delights of the world.
Since Roman seasoned hams in Parma were sought after and appreciated in the capital of the empire; in the early Middle Ages the Benedictine monks had developed the process of production of Parmigiano Reggiano cheese still in use today. In the nineteenth century onwards, Parma developed the strongest food industry of the tomato processing and pulp.
In the twentieth century they were born product consortiums, scientific research laboratories, fairs, university courses. To sanction this strong commitment, in 2003 Parma was chosen as the headquarters of EFSA, the European Food Safety Authority and the 2016 UNESCO's proclamation of Parma Creative City of Gastronomy.
All these elements and a well-rooted and profound food culture have left indelible traces, not only in the world of taste, but also in art and culture of the area. In this way, visitors will be involved in a voyage of discovery and wonder.
